A well-known chef, cookbook author, and famous entertainer once said, "I'm going to do an entirely vegan Thanksgiving meal." What's the centerpiece we all thought? Well, she stuffed a pumpkin. It was the traditional pumpkin stuffing. No, no, no, the traditional turkey stuffing, right?
With nuts and bread and herbs and spices and dried fruit at all kinds of wonderful things, probably a vegan sausage or two in there somewhere, and the entire thing was roasted in the oven. There may have been butter involved. I don't know. It's creamy. The result was delicious. The result was golden brown. The result was a celebration worth the title.
