That was the time to have really wonderful fresh fresh cheese. We have some of the best dairy people and cheese makers anywhere. Well, now it's the next part of cheese season. It's when the milk has been made into cheese that might be 6 months old and it's starting to get a real age on it and be quite quite delicious.
